Lamb Burger with Theory Food Kasundi

Spiced Lamb Burgers with Herbed Yoghurt and Kasundi

 Makes 4

Spiced burger Patty:

500g Lamb mince

1 red onion, finely diced

1 clove garlic, crushed

1 egg

50g bread crumbs

½ tsp chilli flakes

1 Tbsp grated fresh ginger

1 tsp garam masala

1 tsp cumin

1 tsp ground coriander

1 tsp turmeric

1 tsp curry powder

Salt and pepper

 

Herbed Yoghurt:

150g thick Greek yoghurt

Zest of 1 lemon

1 garlic clove, crushed

¼ cup chopped mint

¼ cup chopped coriander

 

To serve:

Theory Food Kasundi

Thick slices of halloumi

Slices of tomato

Baby cos lettuce

4 burger buns

Thinly sliced red onion and fresh coriander

 

-To make the burger patty, combine all the ingredients in a bowl and mix well to combine. Pop in the fridge while you get the rest of the burger ingredients ready.

-To make the herbed yoghurt, pop all the ingredients in a bowl to combine.

-Heat a frying pan over medium-high heat. Shape the lamb mix into four burger patties. Cook the burger patties for a few minutes each side, until nicely browned and cooked through.

-Remove the patties from the pan and without wiping the pan, fry your halloumi a minute or so on each side.

-To serve, spread some herbed yoghurt over the bottom bun, top with some lettuce, tomato, the spiced lamb patty, fried halloumi, a large spoon of Theory Food Kasundi, and the red onion and fresh coriander.
